Ingredients
– 1 pre-baked 9-inch pie crust
– 1 cup whole milk
– 1 cup heavy cream
– 3/4 cup granulated sugar
– 1/2 cup peanut butter (creamy or crunchy)
– 1/4 cup cornstarch
– 3 egg yolks
– 1 tsp vanilla extract
– 1/4 tsp salt
– 1 tbsp unsalted butter
– 1 cup whipped cream (for topping)
– 2 tbsp powdered sugar (for whipped cream)
– 1/4 cup peanut butter crumbles (for garnish, optional)
Instructions
1. In a medium saucepan over medium heat, whisk together the milk, heavy cream, and granulated sugar. Heat until warm but not boiling. Â
2. In a separate bowl, whisk together the peanut butter, cornstarch, egg yolks, vanilla extract, and salt until smooth. Â
3. Slowly pour a small amount of the warm milk mixture into the peanut butter mixture, whisking constantly to temper the eggs. Â
4. Return the entire mixture to the saucepan and cook over medium-low heat, stirring constantly, until thickened (about 5 minutes). Â
5. Remove from heat and stir in the butter until fully incorporated. Â
6. Pour the filling into the pre-baked pie crust and smooth the top. Â
7. Let the pie cool to room temperature, then refrigerate for at least 4 hours or until set. Â
8. In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form. Â
9. Spread or pipe the whipped cream over the chilled pie. Â
10. Garnish with peanut butter crumbles if desired. Slice and serve! Â
