Instructions

  • Heat olive oil in a large pot over medium heat. Add the onion, garlic, and celery, and sauté for 5 minutes until softened.
  • Add the carrots, bell pepper, zucchini, and cabbage to the pot, and cook for another 5 minutes, stirring occasionally.
  • Pour in the diced tomatoes and vegetable broth. Stir in the dried basil, oregano, turmeric, salt, and pepper.
