Description

Soft and moist carrot cake cupcakes, topped with a creamy cream cheese frosting, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, beat the eggs and sugar together until light and fluffy. Add the oil and vanilla extract, and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots, walnuts (if using), and raisins (if using).
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cupcakes from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, frost the cupcakes with cream cheese frosting and serve.

Notes

  • For extra flavor, you can add 1/2 teaspoon of ground ginger to the batter.
  • If you prefer, you can skip the frosting for a lighter treat or use a different frosting like buttercream.
  • These cupcakes can be stored in an airtight container for up to 3 days or refrigerated for longer shelf life.
