- 4 large russet potatoes, thinly sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika

- 1/4 tsp black pepper
- 1/2 cup grated cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 medium onion, thinly sliced
- 1 tbsp butter
- 1 tsp fresh thyme or rosemary (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, toss the potato slices with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Arrange the potato slices in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until the crisps are golden and crispy.
- While the potatoes are baking, melt butter in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-15 minutes, until the onions are caramelized and soft.
- Once the potato crisps are done, remove them from the oven and sprinkle evenly with cheddar and Parmesan cheese. Return them to the oven for 3-5 more minutes, or until the cheese is melted and bubbly.
- Top with the caramelized onions and garnish with fresh thyme or rosemary, if desired.
- Serve immediately as a snack or side dish.
