Description

Cheesy and savory scrolls filled with Vegemite (or similar yeast extract), perfect for breakfast or a snack. These soft, fluffy rolls are full of flavor and easy to make.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 3/4 cup milk
  • 1/4 cup Vegemite (or similar yeast extract)
  • 1 1/2 cups shredded cheese (cheddar or a blend)
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking tray with olive oil.
  2. In a large bowl, combine the flour, baking powder, and salt. Add the cold butter and rub it into the dry ingredients until the mixture resembles breadcrumbs.
  3. Gradually add the milk and mix until a soft dough forms. If the dough is too sticky, add a little extra flour.
  4. Turn the dough out onto a floured surface and roll it out into a rectangle, about 1/4-inch thick.
  5. Spread a thin layer of Vegemite evenly over the dough, then sprinkle the shredded cheese on top.
  6. Carefully roll the dough into a log, then slice it into 8-10 equal pieces.
  7. Place the scrolls on the prepared baking tray and bake for 15-20 minutes, or until golden and puffed.
  8. Remove from the oven and serve warm.

Notes

  • If you prefer a milder flavor, reduce the amount of Vegemite used.
  • These scrolls are best served fresh, but they can be stored in an airtight container for up to 2 days.
  • For a different flavor, try using tomato paste or pesto instead of Vegemite.
