- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cold butter, cubed
- 3/4 cup milk
- 1/4 cup Vegemite (or similar yeast extract)
- 1 1/2 cups shredded cheese (cheddar or a blend)
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking tray with olive oil.
- In a large bowl, combine the flour, baking powder, and salt. Add the cold butter and rub it into the dry ingredients until the mixture resembles breadcrumbs.
- Gradually add the milk and mix until a soft dough forms. If the dough is too sticky, add a little extra flour.
- Turn the dough out onto a floured surface and roll it out into a rectangle, about 1/4-inch thick.
- Spread a thin layer of Vegemite evenly over the dough, then sprinkle the shredded cheese on top.
- Carefully roll the dough into a log, then slice it into 8-10 equal pieces.
- Place the scrolls on the prepared baking tray and bake for 15-20 minutes, or until golden and puffed.
- Remove from the oven and serve warm.
Notes
- If you prefer a milder flavor, reduce the amount of Vegemite used.
- These scrolls are best served fresh, but they can be stored in an airtight container for up to 2 days.
- For a different flavor, try using tomato paste or pesto instead of Vegemite.
