- 2 cups vegetable broth
- 1–2 chipotle peppers in adobo sauce, minced (adjust to taste)
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 1/2 cup heavy cream
- For the Smoked Cheddar Pull Apart Bread:
- 1 loaf of soft bread dough (store-bought or homemade)
- 1 cup smoked cheddar cheese, shredded
- 1/4 cup melted butter
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon garlic powder
- Salt, to taste
Instructions
- For the Chipotle Tomato Soup: Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté until softened, about 5 minutes.
- Stir in the crushed tomatoes, vegetable broth, chipotle peppers, smoked paprika, and cumin. Bring to a simmer and cook for 15-20 minutes, allowing the flavors to meld together.
- Blend the soup using an immersion blender or transfer to a blender to puree until smooth. Return to the pot and stir in the heavy cream. Season with salt and pepper to taste. Keep warm.
- For the Smoked Cheddar Pull Apart Bread: Preheat the oven to 375°F (190°C). Grease a bundt pan or a round cake pan.
- Roll out the bread dough and cut it into small pieces (about 1-2 inches in size). Layer the dough pieces in the prepared pan, sprinkling shredded smoked cheddar cheese between the layers of dough.
- Drizzle the melted butter over the top of the dough and sprinkle with garlic powder, parsley, and salt.
- Bake for 20-25 minutes, or until the bread is golden brown and cooked through. Let cool slightly before serving.
