This Chipotle Tomato Soup with Smoked Cheddar Pull Apart Bread is a comforting and smoky dish that pairs a rich, spicy tomato soup with cheesy, pull-apart bread that’s infused with a smoky cheddar flavor.

Ingredients

Units Scale
  • For the Chipotle Tomato Soup:
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 12 chipotle peppers in adobo sauce, minced (adjust to taste)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • For the Smoked Cheddar Pull Apart Bread:
  • 1 loaf of soft bread dough (store-bought or homemade)
  • 1 cup smoked cheddar cheese, shredded
  • 1/4 cup melted butter
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • Salt, to taste

Instructions

  1. For the Chipotle Tomato Soup: Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté until softened, about 5 minutes.
  2. Stir in the crushed tomatoes, vegetable broth, chipotle peppers, smoked paprika, and cumin. Bring to a simmer and cook for 15-20 minutes, allowing the flavors to meld together.
  3. Blend the soup using an immersion blender or transfer to a blender to puree until smooth. Return to the pot and stir in the heavy cream. Season with salt and pepper to taste. Keep warm.
  4. For the Smoked Cheddar Pull Apart Bread: Preheat the oven to 375°F (190°C). Grease a bundt pan or a round cake pan.
  5. Roll out the bread dough and cut it into small pieces (about 1-2 inches in size). Layer the dough pieces in the prepared pan, sprinkling shredded smoked cheddar cheese between the layers of dough.
  6. Drizzle the melted butter over the top of the dough and sprinkle with garlic powder, parsley, and salt.
  7. Bake for 20-25 minutes, or until the bread is golden brown and cooked through. Let cool slightly before serving.
  8. Serve the chipotle tomato soup alongside the smoked cheddar pull-apart bread, and enjoy!

Notes

  • If you prefer a less spicy soup, use only one chipotle pepper or omit the adobo sauce entirely.
  • You can substitute the smoked cheddar with any cheese of your choice, such as sharp cheddar or mozzarella.
  • For added texture, you can top the soup with croutons or a dollop of sour cream.
