Description

Golden, crispy, and perfectly seasoned roast potatoes, with a soft interior and crispy edges, making them the perfect side dish.


Ingredients

  • 2 lbs potatoes, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Bring a large pot of salted water to a boil and add the potato chunks. Boil for 10-12 minutes or until the potatoes are slightly tender but not fully cooked.
  3. Drain the potatoes and let them sit for a few minutes to dry off.
  4. Place the potatoes on a baking sheet and drizzle with olive oil. Toss to coat evenly.
  5. Sprinkle with garlic powder, rosemary, salt, pepper, and paprika. Toss again to ensure the potatoes are well coated in the seasonings.
  6. Spread the potatoes in a single layer on the baking sheet, ensuring they’re not overcrowded.
  7. Roast in the oven for 30-40 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside.
  8. Remove from the oven and sprinkle with fresh parsley before serving, if desired.

Notes

  • For extra crispiness, you can parboil the potatoes for a longer time, and shake them a bit in the pot to roughen up the edges before roasting.
  • Serve with your favorite main dish or as a snack with dipping sauce.
