- 2 lbs potatoes, peeled and cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Bring a large pot of salted water to a boil and add the potato chunks. Boil for 10-12 minutes or until the potatoes are slightly tender but not fully cooked.
- Drain the potatoes and let them sit for a few minutes to dry off.
- Place the potatoes on a baking sheet and drizzle with olive oil. Toss to coat evenly.
- Sprinkle with garlic powder, rosemary, salt, pepper, and paprika. Toss again to ensure the potatoes are well coated in the seasonings.
- Spread the potatoes in a single layer on the baking sheet, ensuring they’re not overcrowded.
- Roast in the oven for 30-40 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside.
- Remove from the oven and sprinkle with fresh parsley before serving, if desired.
Notes
- For extra crispiness, you can parboil the potatoes for a longer time, and shake them a bit in the pot to roughen up the edges before roasting.
- Serve with your favorite main dish or as a snack with dipping sauce.
