Description

Garlic Parmesan potatoes are a simple and flavorful side dish, featuring crispy roasted potatoes tossed in garlic, butter, and Parmesan cheese.


Ingredients

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss halved potatoes with olive oil, garlic, Parmesan, oregano, paprika, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Roast for 30-35 minutes, flipping halfway through, until the potatoes are golden and crispy.
  5. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • For extra crispiness, broil the potatoes for the last 2-3 minutes of cooking.
  • You can also use freshly grated Parmesan for a stronger flavor.
