Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss halved potatoes with olive oil, garlic, Parmesan, oregano, paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Roast for 30-35 minutes, flipping halfway through, until the potatoes are golden and crispy.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For extra crispiness, broil the potatoes for the last 2-3 minutes of cooking.
