Description

Crispy on the outside and tender on the inside, these garlic parmesan roasted potatoes are a perfect savory side dish packed with flavor.


Ingredients

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic, Parmesan, oregano, thyme, paprika, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
  4. Roast for 25-30 minutes or until golden brown and crispy, flipping halfway through if desired.
  5. Remove from oven and sprinkle with fresh parsley before serving.
