- 2 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes with olive oil, garlic, Parmesan, oregano, thyme, paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
- Roast for 25-30 minutes or until golden brown and crispy, flipping halfway through if desired.
- Remove from oven and sprinkle with fresh parsley before serving.
