Description

A delicious and savory stir-fried dish featuring tender chicken and Hokkien noodles, all tossed in a flavorful sauce. It’s a perfect weeknight meal packed with fresh vegetables and bold flavors.

  • 200g Hokkien noodles (fresh or dried)
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon sugar
  • 1/4 cup chicken broth
  • 2 spring onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Cook the Hokkien noodles according to package instructions, then drain and set aside.
  2. Heat the vegetable oil in a large wok or frying pan over medium-high heat. Add the chicken slices and stir-fry for 4-5 minutes, until cooked through. Remove the chicken from the pan and set aside.
  3. In the same pan, add the garlic and onion and stir-fry for 1-2 minutes until fragrant.
  4. Add the bell pepper and carrot, and stir-fry for another 3-4 minutes, until the vegetables are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, and sugar. Add this sauce mixture to the pan along with the chicken broth, and stir to combine.
  6. Add the cooked noodles and chicken back into the pan. Toss everything together for 2-3 minutes, ensuring the noodles are evenly coated with the sauce and everything is heated through.
  7. Garnish with chopped spring onions and sesame seeds (if using) before serving.

Notes

  • For a spicier version, add some sliced chili or chili paste to the sauce mixture.
  • Feel free to add more vegetables like mushrooms, bok choy, or bean sprouts for extra crunch and nutrition.
  • If using dried Hokkien noodles, soak them in hot water for a few minutes before cooking.
