Description

Tender and hearty homemade egg noodles made from scratch with simple ingredients, perfect for soups, casseroles, or as a side dish.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon butter, melted

Instructions

  1. In a large bowl, mix the flour and salt together.
  2. Make a well in the center and add the eggs, milk, and melted butter.
  3. Mix together until a dough forms. Knead on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  4. Cover the dough with a towel and let it rest for 30 minutes.
  5. Roll the dough out thinly and cut into desired noodle shapes.
  6. Allow the noodles to dry for about 20-30 minutes before cooking.
  7. To cook, boil in salted water for 2-4 minutes until tender. Drain and serve as desired.

Notes

  • Dust noodles with extra flour to prevent sticking while drying.
  • For richer noodles, use an extra egg yolk.
  • Fresh noodles cook much faster than dried pasta, so keep an eye on them.
  • Freeze uncooked noodles for later use by placing them in an airtight container.
