Instructions

  • Prepare the Brownie Base
    • Preheat oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) baking pan or line it with parchment paper.
    • In a mixing bowl, whisk together melted butter and sugar until smooth.
    • Beat in eggs one at a time, then add vanilla extract.
    • In another bowl, whisk together flour, cocoa powder, salt, and baking powder.
    • Gradually fold dry ingredients into the wet ingredients until just combined.
    • Pour the batter into the prepared baking pan and spread evenly.
  • Prepare the Mochi Layer
    • In a microwave-safe bowl, whisk together sweet rice flour, sugar, matcha powder, and baking powder.
    • Gradually add water, mixing until smooth.
    • Microwave in 30-second intervals, stirring in between, until thick and translucent (about 1.5-2 minutes total).
    • Carefully spread the mochi mixture evenly over the brownie layer.
  • Bake the Brownies
    • Bake for 25-30 minutes, or until the mochi is set and the edges are slightly golden.
    • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
