- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter (for filling)
- 1/4 cup powdered sugar (for filling)
- 1/4 teaspoon vanilla extract (for filling)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
- Beat in the egg and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix together the peanut butter, powdered sugar, and 1/4 teaspoon vanilla extract to create the peanut butter filling.
- Roll dough into 1-inch balls. Flatten each ball slightly, and place a small teaspoon of peanut butter filling in the center. Carefully fold the dough around the filling to seal it inside.
- Place the filled dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are golden and the cookies are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to seal the dough well around the peanut butter to prevent the filling from leaking out while baking.
- You can also roll the dough balls in granulated sugar before baking for an extra sweet crunch on the outside.
- Store cookies in an airtight container at room temperature for up to 5 days.
