Description

Soft and chewy cookies with a sweet peanut butter filling that adds a delicious surprise in every bite. Perfect for peanut butter lovers.

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter (for filling)
  • 1/4 cup powdered sugar (for filling)
  • 1/4 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, mix together the peanut butter, powdered sugar, and 1/4 teaspoon vanilla extract to create the peanut butter filling.
  7. Roll dough into 1-inch balls. Flatten each ball slightly, and place a small teaspoon of peanut butter filling in the center. Carefully fold the dough around the filling to seal it inside.
  8. Place the filled dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes, or until the edges are golden and the cookies are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Make sure to seal the dough well around the peanut butter to prevent the filling from leaking out while baking.
  • You can also roll the dough balls in granulated sugar before baking for an extra sweet crunch on the outside.
  • Store cookies in an airtight container at room temperature for up to 5 days.
