Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup mini chocolate chips
  • 1/4 cup crushed peppermint candies
  • 1/4 teaspoon peppermint extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream the butter and granulated sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Mix in the unsweetened cocoa powder and peppermint extract until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  7. Fold in the mini chocolate chips and crushed peppermint candies.
  8. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 8-10 minutes, or until the edges are set and the centers are soft but firm.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
