Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream the butter and granulated sugar together until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Mix in the unsweetened cocoa powder and peppermint extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
- Fold in the mini chocolate chips and crushed peppermint candies.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set and the centers are soft but firm.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger peppermint flavor, you can add more crushed peppermint candies or increase the peppermint extract.
