- 1 lb beef stew meat
- 1/2 lb chorizo, casing removed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1/2 cup tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup frozen peas
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef stew meat in batches, then transfer to the slow cooker.
- In the same skillet, cook the chorizo, breaking it up with a spoon until browned. Add to the slow cooker.
- Add onion, garlic, bell peppers, beef broth, diced tomatoes, tomato paste, cumin, paprika, chili flakes, salt, and pepper to the slow cooker.
- Stir everything to combine and cook on low for 6-8 hours, or until beef is tender.
- About 30 minutes before serving, add frozen peas and stir. Continue cooking until peas are heated through.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For extra flavor, top with fresh cilantro or parsley before serving.
- Can be served with rice or crusty bread for a more filling meal.
