Description

These no‐bake Strawberry and Banana Oat Balls are a healthy, quick snack bursting with natural sweetness and fruity flavor. Made with ripe bananas, fresh strawberries, and hearty rolled oats, they’re perfect for on‑the‑go energy, lunchboxes, or a light dessert. They’re naturally vegan and can be customized with extras like shredded coconut or nuts.


Ingredients

  • 1 ripe banana, mashed
  • 1/2 cup strawberries, finely chopped (about 4-5 medium)
  • 2 tablespoons maple syrup (or honey, if not vegan)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded unsweetened coconut (optional, for rolling)

Instructions

  • Mix Ingredients: In a medium bowl, combine the mashed banana, chopped strawberries, maple syrup, vanilla extract, and salt. Stir in the rolled oats until evenly moistened.
  • Rest: Let the mixture sit for 10 minutes so the oats can soften and the flavors meld.
  • Form Balls: Using your hands or a small cookie scoop, shape the mixture into bite-sized balls (about 1 inch in diameter).
  • Optional Coating: If desired, roll each ball in shredded coconut for extra texture and flavor.

 

  • Chill & Serve: Place the oat balls on a parchment-lined tray and chill in the refrigerator for at least 1 hour before serving.

Notes

These oat balls are best enjoyed chilled and will keep in an airtight container in the fridge for up to 3 days.

Feel free to customize by adding chopped nuts, chia seeds, or a sprinkle of cinnamon for extra flavor.

Adjust the sweetness by adding a bit more maple syrup if your strawberries are tart.
