Description

These decadent strawberry dark chocolate truffles are rich, velvety, and bursting with fruity flavor. Made with real strawberries and dark chocolate, they are the perfect bite-sized treat for any occasion.

Ingredients

– 200g (7 oz) dark chocolate, finely chopped

– 1/3 cup heavy cream

– 1/4 cup freeze-dried strawberries, finely ground

– 1 tablespoon unsalted butter

– 1 teaspoon vanilla extract

– 1/4 teaspoon salt

– 1/2 cup cocoa powder (for coating)

– 1/4 cup additional freeze-dried strawberry powder (for coating, optional)

Instructions

1. In a small saucepan, heat the heavy cream over low heat until warm but not boiling.

2. Remove from heat and add the chopped dark chocolate, letting it sit for 2 minutes.

3. Stir until the chocolate is fully melted and smooth. If needed, place the mixture over a double boiler to melt completely.

4. Stir in the butter, vanilla extract, salt, and ground freeze-dried strawberries. Mix well.

5. Pour the mixture into a shallow dish and refrigerate for at least 2 hours, or until firm.

6. Once firm, scoop out small portions and roll them into balls using your hands.

7. Roll the truffles in cocoa powder or freeze-dried strawberry powder for coating.

8. Store in an airtight container in the fridge until ready to serve.

Notes

– Use high-quality dark chocolate (70% cocoa or higher) for the best flavor.

– If the truffle mixture is too soft to roll, chill it for an additional 30 minutes.

– You can coat the truffles in melted chocolate for a firmer shell.

– Store in the fridge for up to a week or freeze for longer storage.
