Ingredients
**For the Shortbread Cookies:**
– 1 cup unsalted butter, softened
– 1/2 cup granulated sugar
– 2 cups all-purpose flour
– 1/2 tsp salt
– 1 tsp vanilla extract
**For the Caramel Layer:**
– 1 cup caramel candies (or homemade caramel)
– 2 tbsp heavy cream
**For the Chocolate Topping:**
– 1 cup milk chocolate chips (or semi-sweet chocolate)
– 1 tsp vegetable oil (optional, for smooth melting)
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, cream together butter and sugar until light and fluffy.
3. Mix in vanilla extract. Gradually add flour and salt, mixing until a dough forms.
4. Roll out dough to 1/4-inch thickness and cut into circles using a cookie cutter.
5. Place cookies on the prepared baking sheet and bake for 12–15 minutes or until edges are lightly golden. Let them cool completely.
6. Melt caramel candies with heavy cream in a microwave or over a double boiler, stirring until smooth.
7. Spoon caramel onto each cooled cookie and let it set.
8. Melt chocolate chips with vegetable oil in the microwave in 30-second intervals, stirring between each.
9. Spread or drizzle chocolate over the caramel layer. Let the cookies sit until the chocolate hardens.
